This chocolate zucchini bread is paleo, gluten-free and grain-free, using my favorite triumvirate of flours (almond flour, tapioca flour and coconut flour) for the perfect texture. In a medium bowl, combine the almond flour, cocoa powder, baking soda and salt, then set aside.
How to Make This Double Chocolate Zucchini Bread. Once yours zucchini is shredded, you need to remove the excess liquid. Combine the cashew butter, cocoa powder, eggs, vanilla bean paste, maple syrup and melted chocolate in a medium bowl and whisk until smooth.
In a large bowl, combine the almond butter, maple syrup, almond milk and flax egg.
Fold in the zucchini and the chocolate chips.
Pour your batter into your prepared loaf pan. Line a standard loaf pan with parchment paper and grease with coconut oil or baking spray. In large bowl whisk together eggs, oil, maple syrup and vanilla extract.
