Simple Sponge Cake Recipe. Run a knife around side and center tube of pan. Just eggs, sugar, vanilla, flour and baking powder.
The texture should be airy, yet stiff. You can do this by placing your hand gently on the sponge and turning the pan and your hand over so that you are holding the sponge, then place the wire rack on top of the sponge and invert this back the right way up. This way the top of the sponge is up and the base is on the wire rack.
Just eggs, sugar, vanilla, flour and baking powder.
In the bowl of a stand mixer.
In a large bowl, beat egg yolks until light, gradually adding in the sugar. Not sure if you have enough air in the mixture? Using a rubber spatula, fold egg white mixture into the yolk mixture.
