Old Fashioned Johnny Cake Recipe. Sift the yellow cornmeal, flour, sugar, salt, and baking powder into a large bowl. Sift the flour and then measure.
Ladle ¼ cup of batter onto the hot skillet. Add wet to dry ingredients, stir until moistened (don't over-mix or you'll be sorry!). Cook together the cornmeal, milk, shortening, sugar and salt in a double boiler for about twenty minutes.
Press the center of the johnny-cake down with the spatula if needed.
Stir batter occasionally to keep well mixed.
Keep the water to a simmer if possible. Gradually pour the cornmeal mixture in a steady stream into the boiling water, whisking constantly. Ladle ¼ cup of batter onto the hot skillet.
