Old Fashioned Carrot Cake. In a small bowl cream oil, sugar, eggs and vanilla with a mixer. In your Kitchen Aid mixer, combine the sugars, eggs and oil well.
Using a hand mixer, blend until combined. In a large bowl, add the softened cream cheese, butter and vanilla and beat with an electric mixer on medium low speed until it's light, smooth and fluffy. Grease the sides and bottoms, then spread the parchment paper round on the bottoms and grease that, too.
Stir in carrots, nuts and raisins.
In a large bowl, mix together sugar, oil, eggs, vanilla, and buttermilk.
Next in goes the canned pineapples along with its juices and coconut. In a separate bowl, mix flour, cinnamon, baking soda, and salt. In your Kitchen Aid mixer, combine the sugars, eggs and oil well.
