Line muffin tins with cupcake liners. In the bowl of a stand mixer or a large bowl with a hand mixer, add the cake and pudding mixes, sour cream, oil, eggs, vanilla and water. Add in your eggs, milk, oil, and vanilla.
In a bowl mix sour cream and baking soda together; set aside.
Combine the hot coffee and cocoa powder and whisk until smooth.
In a large bowl combine sugar and oil; beat with an electric mixer on medium to high speed until combined. Line cupcake pan with cupcake liners. In another bowl, mix together oil, egg, vanilla extract, peppermint extract and buttermilk until combined.
